I tried combining something Italian to my salmon and came up with an Olive-Tomato Salmon baked in the oven.
For the Salmon: salt, pepper, lemon juice, minced garlic and a bit of olive oil. Set aside.
1. canned tomatoes (remove the juice through a strainer)
2. chop red onions, zucchini and green olives. (I used the green olives since they are saltier than the black).
3. Add some Italian spice, crack pepper, bit of lemon juice and mix.
