Different people swear by different comfort foods when they are sick — whether it's chicken soup in the US, borscht in Russia, or fish porridge in Singapore.
While some Nepali prefer lighter, blander meals that are easier on the stomach, others gravitate towards spicier, hotter foods to sweat out toxins. Regardless, these meals are all nutrient-rich in their own ways and help fight off sickness.
Jaulo is the Nepali's interpretation of congee. But in my recipe of this rice soup, chicken pieces (preferably bone-in) and rice are boiled in a ginger-based broth until the grains have disintegrated into a porridge-like consistency.
Fried garlic bits, chopped green onions, and lemon juice are added for additional layers of flavor.
