Pad Thai for my family

Today is the last day for my sister and her husband in Slovenia. Of course, I was the one to make a late lunch. We are still kind of full of all the "holiday" food, so they said something easy. When I served them with my special pad thai, they were amazed. I added some tortilla chips and red salsa deeping so it was kind of asian fusion maxican kind of lunch. I also served them with these amazing looking infused waters with lemons, oranges and red grapefruits. Of course freshly picked lattuce was a must as well.

Black Bean Flautas with Avocado Dipping Sauce
Ingredients 1/2 cup chopped red onion 1/4 cup chopped cilantro Juice of 1 large lime 1 (16-ounce) can spicy vegetarian refried black beans 16 white corn tortillas, warmed (see note) Grapeseed, vegetable, or canola oil for pan frying Avocado Dipping Sauce (see recipe below) Chopped lettuce, cilantro, hot sauce, and lime wedges for serving Instructions In a small bowl, combine the red onion, chopped cilantro, and lime juice. Set aside to marinate, stirring occasionally. In a large heavy skillet, heat ¼-inch of oil over medium heat. Working with one tortilla at a time, spread 1 heaping tablespoon of refried black beans and 1/2 tablespoon of the onion, cilantro, and lime mixture evenly along one side of the tortilla. Gently roll the tortilla tightly beginning on the side with the filling. Use a toothpick to secure the flauta so it doesn't unroll while cooking. Place the prepared flautas seam side down in the hot oil and cook, rotating with tongs, until they are golden brown and crispy on all sides, approximately 4-5 minutes per batch. Continue to cook the rest of the flautas in batches, adding more oil as needed. Remove the toothpicks after you have fried them and serve with Avocado Dipping Sauce, lettuce, cilantro, hot sauce, and lime wedges. Avocado Dipping Sauce Ingredients 2 ripe avocados, halved and pits removed, scooped from their shells 1/4 cup chopped red onion Juice of 1 lime 1/4 cup chopped cilantro 1 jalapeno, chopped 1 clove garlic 2 tablespoons water Kosher salt to taste Instructions Combine the avocado, red onion, lime juice, cilantro, jalapeno, garlic, and water in a blender or food processor, then puree until smooth and creamy. Season to taste with kosher salt. Chill until ready to use.
Thai-style Sweetcorn Fritters with Sweet Chilli Dipping Sauce
Ingredients for the sweet chilli dipping sauce 2 red chillies, seeds in, finely chopped (remove seeds if you prefer a milder sauce) 2 cloves garlic, finely chopped 1/2 tsp sea salt 100 ml Mirin (rice vinegar) 50 ml water Juice of 1 lime (reserve the lime zest for the fritters, below) 20 g sugar for the sweetcorn fritters 1 shallot roughly chopped 4 cloves garlic, deseeded and roughly chopped 5 cm piece of fresh ginger, peeled and roughly chopped 2 red chillies, deseeded and roughly chopped 1 stalk fresh lemongrass, tough outer leaves removed, finely sliced 1 tbsp maple syrup 2 tbsp organic soy sauce 4 tbsp organic coconut cream zest of 1 lime 275 g fresh sweetcorn kernels 1/4 cup canned pumpkin 120 g rice flour 6 spring onions, finely chopped 1 tbsp french coriander, chopped 1 tbsp fresh Thai basil, chopped (use “ordinary” basil if not available) Method 1. For the sweet chilli dipping sauce, place the chillies, garlic, water and sea salt in a food processor or blender and process to a fairly smooth paste. Pour the mirin into a saucepan and add the sugar. Heat over a low heat, stirring until the sugar has dissolved. Now add the chilli and garlic paste and stir. Increase the heat to medium, bring to the boil. Boil vigorously for a minute then reduce the heat to a simmer for 5 minutes to reduce the sauce. Keep stirring every so often. Remove from the heat, stir in the lime juice and set aside to cool. 2. Now for the fritters. Place the shallot, garlic, ginger, chillies, lemongrass, maple syrup, soy sauce, coconut cream and lime zest into a blender or food processor, and blend to a paste. Add roughly half the sweetcorn kernels and process again, to form a thick spicy paste. 3. Pour this paste into a mixing bowl, add the pumpkin and whisk into a smooth batter. Now add the rice flour, a little at a time, stirring or whisking each time to fully incorporate it into the batter. 4. Now add the remaining sweetcorn kernels with the spring onions, coriander and basil and stir to combine. 4. Pour the groundnut oil into a suitable pan to a depth of around 4 cm. place over a high heat. Once the oil is hot (hot enough to brown a cube of bread within 30 seconds), carefully place large teaspoonfuls of the fritter batter into the hot oil. Cook for 3-4 minutes, turning half way through, until the fritters are golden brown all over. Drain on kitchen paper before serving with the dipping sauce.
The Christmas Latte to Rule Them All
I've talked about this cafe before, and I'll talk about it again. All That Sweets is hands down my favorite dessert cafe on Earth. Watch my video review here or read below^^ Today I went alone so I passed on a slice of the strawberry shortcake but look how adorable is it! Their cakes are always light and creamy, though the flavors change daily! I've seen chocolate, vanilla, and even kiwi cakes. Instead I opted for one of their amazing macarons. Because I came late in the day, my only option was the chocolate raspberry "merry xmas" heart macaron, but I probably would have chosen that anyway. These flavors also vary with the season but every single one I've ever tried has been absolutely delicious. But of course, the star of the show is my Christmas Tree Latte <3 Their lattes are amazingly intricate, and they have a dozen of them on the menu at all times. The homemade (delicious) whipped cream is covered in melted chocolate, sprinkles, and meringue cookies. I seriously thought I hated meringue until I tried these babies. Now I can't get enough! They sell these for the month of December, and then usually move on to make snowflake or other winter themed lattes. All year 'round they offer rose, raincloud, and even coral styled lattes! You'll Never Guess What People Eat At The Movies Across The Globe
Yuck. There are hundreds of countries around the world sitting in movie theaters across the globe. One big difference is the food they eat while in the audience. From dried bugs to salted candies, world customs really have their own distinct palette. Though Americans believe there's nothing in the world that could be better than a nice bag full of buttery popcorn, they are in for a huge surprise. Check out the movie theater snacks from around the world. You're going to be shocked. USA: Salted, Buttery, Popcorn It's crunchy. It's addicting. It's SO American. Popcorn is a very traditional snack without a ton of calories...that is, if you don't drench it in a pool of butter and salt. Popcorn has had a long standing reservation in our culture, primarily since corn is such in abundance within our country. We've muti-purposed corn to be just about anything but popcorn is still our favorite creation. Just remember, a small popcorn won't get you through intermission. A large popcorn will make you feel fat. But who cares, right? Great Britain: Sugared Popcorn Why am I not surprised that Great Britain would have a seamlessly more proper snack? Compared to American, the Brits always seem to do the exact opposite. From my personal view, I just don't understand the thrill of sugary popcorn. However then again, kettle corn and caramel corn is a huge success in the States. Brits are notorious for their bitter drinks such as coffee and tea paired with a very decadent and sweet dessert. I guess it's only fitting, pinkies up. Japan: Iwashi Senbei The first idea that popped into your mind was probably not that these are sardine rice crackers. The crisps are baked in sugar and soy sauce to give them their distinct taste. Rice is a very traditional food within the country so it's no surprise it is a snack as well. And with Japan being a very dependent country on its seafood industry, it's obvious that a leading snack brand would be fish based. Still interesting. Brazil: Roasted Ants Okay GROSS. As an American, I will never understand the love for eating bugs. We get it, they are packed with a ton of protein and have a nice crunch. But it's so taboo in American culture. On the other hand, Brazilians loves them. It's an aphrodisiac, or food that stimulates sexual desire, which could be the reason for why Brazilians are such a fan. Talk about a passive aggressive way to show your date that you want to hook up. Norway: Dried Reindeer Meat Somewhere in the North Pole, Santa is crying. This food seems so fitting though for the region. Reindeer meat is cut and then dried for a chewy taste. Very similar to beef jerky in the States. Reindeer meat boasts very low fat and high protein. However, I can't seem to feel sympathy for Rudolph & his gang once they find out that the Norwegians are snacking on their friends. Guess Norway is going to become the land of misfits toys soon enough... South Korea: Dried Cuttlefish I guess this goes hand in hand with popcorn in the Asian nation. With a meaty texture and briny flavor, apparently South Koreans can't get enough. It can be seasoned in a variety of flavors. Though they're also fans of roasted chestnuts, dried cuttlefish still frequently comes out as the fan favorite. I still don't know what a cuttlefish is. Russia: Beluga Caviar This is reserved for the rich and only the rich but a very common wealthy delicacy. Though the average folk may not be accustomed to eating the beluga caviar themselves, they know exactly who is receiving it when they attend the movie theater. Apparently movies in Russia are a more fancy affair, something Americans and other world countries would gawk at. With Russia being known to have extreme customs, this one tops the cake. Greece: Souvlaki Okay, this looks delicious. Lamb or beef souvlaki will be a fit for an Grecian attending an outdoor movie. They're tender and savory and it's already making my mouth water. Grecians are notorious for having the best food in the world and it's no surprise that their movie theaters also come with a wide delicious variety of choices. Please fly me to Greece because I'm starving. Netherlands: Salty Licorice This could be the most hated snack in America. Black licorice is a very distinct taste that very few people enjoy. In America, our black licorice contains a lot of sugar. However in the Netherlands, they salt their licorice with ammonium chloride which gives eaters a tongue-numbing sensation. Is this candy a drug? No thank you. India: Samosas This is my favorite. Look how good that looks! Bollywood theaters are all the rage in India far more popular than any Western movie. Samosas are potato stuffed pastries that taste as good as they look. With Bollywood movies comes a delicious combo of chutney and cheese sandwiches and vada pav, potato fritters in a bread bun. I could definitely ship this idea in the USA.
Make Super Easy Curry – Just 30 Minutes!
Let's be real. Getting a healthy, delicious dinner on the table can be a real chore sometimes, especially after a long, tiring day of work or school. That's why I'm always on the lookout for fast, easy-to-make recipes – then I've got no excuse NOT to eat healthy, homemade food! You guys are going to love this simple curry – it takes just 30 minutes to throw together, and won't leave you with tons of dishes to wash. Plus, it's like multiple recipes in one – you'll see why! Keep this on hand for those nights when you're too tired to cook; the promise of this delicious payoff for so little work will motivate you to forget the takeout, and whip up some curry. :) Step One: Choose Your Curry Sauce Depending on whether you're in the mood for a savory, lightly spicy yellow Indian-style curry, or a sweet Thai-inspired mango curry, choose one of the sauces above. They're both equally simple to prepare! Step Two: Choose Your Protein Vegans, are you in the mood for quinoa? For vegetarians, perhaps some paneer cheese. Or, if you're a meat eater, lean chicken or turkey breast would go great with either sauce, and you can even try a flaky white fish with the mango curry. Adventurous vegetarians might want to try subbing in tempeh or another meat substitute! Step Three: Choose Your Vegetables Snow peas, peppers, broccoli, carrots, zucchini, green beans, potatoes, even eggplant or butternut squash – choose a mix of your favorite veggies! Step Four: Cook It Up! Follow the recipes below and whip up your satisfying meal! :) Note: If you chose quinoa as your protein, cook separately, and then spoon curry on top to serve. Classic Yellow Curry 1 onion, roughly chopped 1 tsp each ground coriander, ground cumin, and ground turmeric 2 cans of tomatoes, chopped a pinch of sugar 1 inch piece root ginger, peeled and finely chopped 2 cloves garlic, chopped 2 red chillies, deseeded and finely chopped 12-14 oz. reduced-fat coconut milk juice of ½ lime 3 tbsp chopped cilantro In food processor, blend onion, coriander, cumin, turmeric, and 6 tbsps of water to make a paste. Heat 1 tbsp of olive oil in a pan, and add paste, tomatoes, sugar, and 1 tsp of salt. Simmer, stirring often, for 5 mins. Stir in ginger, garlic, chili, and coconut milk. Bring to a simmer. Add protein. Cover and gently simmer for 5-15 mins (until protein is nearly cooked through). Add veggies. Remove lid and simmer over medium heat, about 5-10 minutes, until veggies and protein are cooked, and sauce has thickened slightly. Stir in lime juice and cilantro. Serve over rice or quinoa. Sweet Mango Curry 1 onion, finely chopped 1 red pepper, sliced 1 tsp medium curry powder 2 tbsp tomato purée 1 cup vegetable stock 1 tbsp mango chutney 12-14 oz. chopped tomatoes in tomato juice 7-8 oz. baby spinach, washed In a pan, heat 1 tbsp olive oil over medium heat and sauté onion and red pepper for 10 min or until softened. Stir in curry powder and tomato purée, and sauté for 30 secs. Add stock, chutney, and tomatoes. Simmer uncovered for 10 minutes. Add protein; simmer for 5-15 mins (until protein is nearly cooked through). Add veggies, and simmer for 5-10 minutes. Stir in spinach just before serving, and season to taste with salt and pepper. Serve over rice or quinoa. YAY! That's how easy it is to have a delicious curry dinner for you and the fam :) Hope you guys enjoy! Baked Chicken Nuggets Stuffed with Mozzarella
Ingredients For the chicken nuggets: 1 lb boneless, skinless chicken breasts, cut into 2-inch pieces ½ teaspoon salt ⅛ teaspoon black pepper 1.5 oz. mozzarella cheese, cut into strips (about 1.5" x ⅓" x ⅓") 1 cup Panko bread crumbs ⅓ cup finely grated Parmesan cheese ½ teaspoon garlic powder ¼ teaspoon Italian seasoning 1 tablespoon olive oil ⅓ cup all-purpose flour 2 large eggs, lightly beaten For the honey mustard yogurt dip: ⅓ cup Greek yogurt 2 tablespoons honey 1 tablespoon Dijon mustard 2 teaspoons freshly squeezed lemon juice pinch of salt and pepper, to taste Instructions Preheat oven to 400 F degrees. Spread Panko bread crumbs in a thin layer on rimmed baking sheet and bake for 3-4 minutes, until lightly toasted. Once mostly cooled, transfer breadcrumbs to a shallow dish. Stir in Parmesan, garlic powder, Italian seasoning and olive oil. Mix well. Set aside. Set a wire rack on the baking sheet; lightly coat rack with cooking spray. Season chicken with salt and pepper. Use a sharp knife to cut a pocket into each piece of chicken lengthwise, and make the pocket as big as possible without cutting through the backside. Stuff the mozzarella into the pockets. Make sure the strips go all the way into the chicken but doesn't come out the other side. Place flour and eggs in separate shallow dishes. Working in batches, dredge chicken in flour (shaking off excess), dip into eggs, then dredge in Panko mixture, pressing to coat. Transfer to the rack. Bake until the chicken is cooked through, 10 to 12 minutes. Meanwhile, in a small bowl, combine the yogurt, honey, Dijon mustard and lemon juice. Season with salt and pepper to taste. Serve the chicken with the honey mustard yogurt dip.
Baked Chicken Parmesan Meatballs in Tomato Cream Sauce
Meatballs in tomato sauce are the best comfort when you're fighting an unrelenting cold. This can be eaten alone with bread or they would be great over pasta, quinoa, on a sandwich or maybe even cut up and added to a pizza. Enjoy! Yield: 6-8 servings For the sauce: 1 (28 oz.) can whole tomatoes, liquid reserved 1 tbsp. butter ¼ cup finely chopped onion 1½ tbsp. tomato paste 2 cloves garlic, minced ½ tsp. red pepper flakes Salt and pepper, to taste 1/3 cup heavy cream or half-and-half For the meatballs: ½ cup dried panko 1/3 cup grated onion 1 tsp. dried parsley 1 tsp. dried basil ½ cup freshly grated Parmesan cheese 3/4 tsp. kosher salt ¼ tsp. ground black pepper 3 cloves garlic, minced 1 large egg, lightly beaten 1½ lbs. ground chicken 2 tbsp. olive oil To finish: 4 oz. shredded mozzarella 2 tbsp. freshly grated Parmesan 2-3 tbsp. minced fresh basil (optional) INSTRUCTIONS: To make the sauce, add the tomatoes to a blender or food processor. Puree until smooth, adding a bit of the reserved liquid if necessary to smooth the mixture out. Melt the butter in a large, deep skillet or sauté pan over medium-high heat. Add the onion and cook about 1 minute, until it begins to soften. Stir in the tomato paste, garlic and red pepper flakes and mix just until fragrant, about 30 seconds. Stir in the tomato mixture, lower the heat to a simmer, and cook about 5-8 minutes, until the sauce is slightly thickened. Season to taste with salt and pepper. Remove the pan from the heat and stir in the cream. Set aside. To make the meatballs, combine the panko, grated onion, parsley, basil, Parmesan, salt, pepper, garlic and egg. Stir together with a fork just until blended. Mix in the ground chicken and knead together gently until evenly combined. Form the mixture into meatballs about 1½-inch in diameter. Preheat the oven to 400˚ F. Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the meatballs to the pan in a single layer. Let cook, turning occasionally, until all sides are browned. Once all of the meatballs are browned, place them in the pan with the tomato sauce. Sprinkle the mozzarella and additional Parmesan over the top. Bake until the cheese is fully melted and bubbling and the meatballs are cooked through, about 15 minutes. Remove from the oven and garnish with the fresh basil. Serve warm.
