Refried beans are amazing, and they can be paired with both a meat or vegetarian option. I remember when I used to go over my best friend's house, we'd eat one of our cheap-and-easy meals. It was refried beans with tortilla and sour cream. She considered it a poor-man's dinner. I thought of it as the perfect meal.
It's also perfect because beans. And I like much. Maybe too much.
You can put refried beans in a quesadilla, in a wrap, with rice, eggs, meat, on your boss' face. You can even eat it as a dip. Seriously, the options are endless.

Alright, let's make some fried stuff.

What You Need:

1 can pinto beans
1⁄2 medium onion, chopped
1⁄4 cup butter
3⁄4 teaspoon salt
1⁄2 cup cheddar cheese, grated/shredded

How To Make It:

1) Bring beans and onions to a boil in a saucepan.
2)Strain liquid and discard.
3) Put beans in an electric mixer and mash/puree.
4) Stir in butter and salt.
5) Return to saucepan and over low heat stir until heated thoroughly.
6) Stir in grated cheese.
