Yet another easy to make and delicious lunch. I made this today with my mother, we had some zucchini and aubergine left from our garden so we managed this lunch really quickly. As a side dish I went with rice, since I am a big rice lover. And as always, some fresh lattuce from garden is a must. Have you ever had fried zucchini and aubergine? Which one do you prefer? I think I have to go with aubergine.
