This is a great recipe from TrailGroove that can be enjoyed alongside eggs or can be eaten for dinner if you are looking for some warm comfort food while camping or hiking. Also, the recipe can easily be adapted by adding different spices, meat, or veggies to the mix. Cook it either over the campfire or on your camping stove. Ingredients: 1 Potato, cut into small chunks 1/4 Cup chopped onion 1/4 cup chopped bell pepper Salt/pepper, other seasonings as desired 1 oz packet olive oil Ketchup packets (optional--but delicious with eggs) **A piece of tin foil for cooking Directions: 1. Place the cut up potato, onion, and pepper in the center of the tinfoil 2. Season with salt/pepper/seasonings and drizzle with olive oil 3. Wrap the foil up tightly and place into hot coals of the fire (**or if you are using a stove, place the seasoned ingredients on the frying pan and cook over the stove) 4. Cook for about 20 minutes, or until the potatoes are soft
