It's the Lemon Meringue Pie Cocktail. Not only are these EASY to make, you can either make the meringue yourself (days or weeks ahead) or you can purchase the French meringue cookies at the store. Personally, I think you should at least have a go at it and attempt to make them yourself. You may find a brand new passion out of it!

Lemon Meringue Pie Cocktail
1 lemon wedge
Coarse white sugar
1-1/2 to 2 cups ice cubes
3 ounces Limoncello
1 ounce vodka
1 tablespoon lemon sorbet
2 teaspoons lemon juice
Rub lemon wedge around the rim of a martini glass; dip rim in coarse sugar. Set aside.
Fill a shaker three-fourths full with ice. Add the Limoncello, vodka, sorbet and lemon juice to shaker; cover and shake for 10-15 seconds or until condensation forms on outside of shaker. Strain into prepared glass. Pipe fresh French meringue onto cocktail and sprinkle lemon zest.
