I want to challenge all the brides, grooms, event planners, etcetera, to create this fabulous martini for your wedding or special event! It's pink, fruity, frothy and takes a bit of skill to pull off the Swiss meringue, but it's going to earn you so many brownie points there won't be enough hashtags to sing your praises! Sounds great to me!
Raspberry & Meringue Martini
2 pints of raspberries
1/2 cup powder sugar
1/3 cup Cointreau liqueur
3 oz raspberry liqueur
1 oz vodka

1. Wash and puree raspberries. Add powder sugar and Cointreau liqueur, blend well until all the ingredients well incorporated and forms into smooth shake.
Spread thin layer sugar on the plate. Run lemon slice on the rims of margaritas glasses .Press rims into sugar.
2. Mix vodka, liqueur and ice in the cocktail shaker.
Strain ice and combine mixtures, shaking gently and pouring into rimmed glasses.
3. Top with fresh Swiss meringue.
* (alternatively, you can crush Swiss meringue cookies into the glass)
