cube 4 boneless skinless chicken breasts and sprinkle with my special lemon pepper blend (2tsp lemon pepper, 1tsp poultry seasoning, dash of dill, dash of cumin, a pinch of Italian seasoning, half a tsp garlic powder, half a tsp fresh crushed black pepper, and 1 tsp "Webber" roasted garlic herb seasoning)...see next pictures
In frying pan, drizzle extra-virgin olive oil and saute about a quarter cup minced onion and 2 minced cloves of garlic then add chicken. Cook chicken thoroughly (there will be juices from the chicken as you cook, drain it and set aside).
In a large pot boil some water for your penne pasta. Add about 3 tablespoons of Italian seasoning to the water when you start. When water is just starting to boil add pasta and cook to your preference.
When pasta is ready stir in 1 can diced tomatoes (don't drain), 1 can cream of chicken soup, drippings from the chicken and about a cup of corn and return to medium heat on stove. Add half a cup shredded parmesan, 1 cup shredded mixed cheese, and some feta.. stir until mixed in completely. Stir in chicken and let simmer for about 5 minutes. Stir all the good stuff up from the bottom of the pot, serve and enjoy
