Broccoli Feta Omelet with Rye Toast

Prep Time: 5 min. Cook Time: 10 min. Difficulty: Super Easy!
Makes 1 serving (1 omelet and 2 slices toast)

What You'll Need

Cooking spray
1 cup broccoli, chopped
2 large eggs, beaten
2 tablespoons feta cheese, crumbled
1/4 teaspoon dried dill
2 slices rye bread, toasted
1. Heat a nonstick pan over medium heat, then coat with cooking spray. Add broccoli and cook 3 minutes.
2. In a small mixing bowl, combine egg, feta, and dill. Season with salt and pepper to taste. Add to pan and cook 3-4 minutes. Flip omelet and cook another 2 minutes, or until cooked through.

Serve with toast, and enjoy your healthy breakfast! :D

This sounds extremely yummy, @allischaaff! My only worry, lol, is about dealing with my child's ...gaseous nature... all day if I feed him broccoli at breakfast. >.< The boy is awful!!!! Smh. You don't even know!!
