My newest dinner invention 3 boneless, skinless chicken breast 1 can diced tomatoes 2 cups rice 2 cups chicken broth 1/2 medium onion 2 cloves garlic 1/2tsp salt (I use kosher salt) 1/2 tsp garlic poweder 1 tsp fresh crushed black pepper 1tsp fajitas season pinch dried cilantro pinch rubbed sage dash poultry season vodka Chipotle peppers
Combine the seasonings and herbs (I use a mortar and pestal),
defrost and trim chicken and dice the peppers then start to saute the onion and garlic
with a splash of vodka, deglaze the pan and add Chipotle. Rub chicken with the season you just made and add to pan and reduce heat to just above medium heat. Cover and cook until center of chicken is 165°
Remove chicken, add another splash of vodka to again deglaze the pan then add tomatoes and simmer for about 5 minutes
Return chicken, cover and simmer for 2 minutes each side. Rice: Make your rice as you normally would but replace water with chicken broth
Pair with a vegetable (I recommend corn), plate and serve (above are a couple plating ideas) Try it and let me know what you thought
