Creamy, delightful, and oh-so-good, no one should have to sacrifice their fettuccine alfredo just because they're on a diet. I mean, what kind of life is that!?!
So here's a recipe that cuts the calories wayyyy down, while keeping the flavor at maximum!
Skinny Fettuccine Alfredo
Prep Time: 5 min. Cook Time: 20 min. Difficulty: Super Easy!

Makes 4 servings
What You'll Need
12 ounces fettuccine
1 tablespoon olive oil
4 cloves garlic, minced
3 tablespoons flour
1 cup chicken broth
1 cup low-fat milk
3/4 cup freshly grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
fresh parsley, for garnish
What To Do
1. Bring a large pot of water to boil over high heat. Salt water generously. Cook pasta al dente, according to package instructions.
2. Meanwhile, heat olive oil in a saucepan over a medium flame. When pan is hot, sauté garlic for one minute, until fragrant. Sprinkle in flour, stirring to combine, and then cook another minute.
3. Gradually add chicken broth, and then the milk, whisking until smooth. Bring sauce to a simmer, and let it thicken for a minute or so, then stir in Parmesan cheese, salt, and pepper. Reduce heat to medium low until pasta is done.
4. Drain pasta, then add to sauce pan and toss to coat. Garnish with fresh parsley for an extra pop of color. Serve hot, and enjoy! :)
