So it's been quite a while since the last time I made a post on Vingle. Let's just say it that I've been testing out few amazing recipes that I'm about to share with you. First one is vegan mac and cheese, yes it tastes the same, if not even better plus it's extremely healthy and if you don't use cashews it's a perfect meal for anyone that's doing high carb, low fat diet. Ingredients: - your choice of pasta (make sure that it doesn't contain eggs if your're vegan!) - 1 carrot - 2 potatoes - onion wedge - 1/2 cup of raw cashews - 1 tsp salt - 1 tsp garlic powder - 1 tsp onion powder - 1 tsp nutritional yeast
- 1 tsp tumeric I think that I don't need to explain how to cook pasta haha, so let's move to the more interesting part, how to make sauce. All you're gonna do is slice potatoes and let them boil for 2 minutes, afterwards add sliced carrots and only few minutes before potatoes and carrots are cooked (about 15 minutes), add onion wedge. When it's cooked, pick out all ingredients but make sure to save water. Now you have to blend cashews, the boiled water (about 1 1/2 cups, but it depens how thick do you want your sauce), the veggies and seasoning, if you like extremely cheesy taste you can add more nutritional yeast, but cashews do their job pretty well so if you don't have nutritional yeast don't worry, just add more tumeric. Now mix all together and enjoy your vegan mac and cheese and feel good about yourself. Because by being vegan for a day you saved 1,000 gallons of water, 45 pounds of grain, 30 sq ft of forest, 20 lbs co2 equivalent and the life of the animal.
