If you're vegetarian, this is definitely a recipe you'd enjoy. It's definitely hearty and savory and all things AMAZING. This is satisfying -- even for the hardcore meat lovers (and yes I am one of those!)
To make it vegan, you can just switch out the dairy cheese for vegan cheese --- and there you have it, a perfect vegan meal! If you want to make this healthier, you can also switch out the regular potato for a sweet potato (sweet potatoes will take a bit more time to cook).

What You'll Need:
Cooking spray 1/4 small chopped onion
1/2 garlic clove, minced
1 can no-salt-added black beans (rinsed and drained)
1/2 cup frozen whole-kernel corn
1/2 cup fresh salsa
¼ cup shredded cheese of choice
Chopped fresh cilantro
How To Make It:
1) Pierce potato with a fork; arrange in a circle on paper towels in microwave oven. Microwave at HIGH 7 minutes, turning and rearranging potato after 3 minutes.
2) While potato cook, heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add onion and next 3 ingredients; sauté 3 minutes. Reduce heat to low. Add beans, corn, and salsa; cook 4 minutes or until thoroughly heated.
3) Split potato lengthwise, cutting to, but not through, other side. Fluff with a fork. Spoon about 1 cup bean mixture over the potato. Top with cheese and cilantro.
