These just look so scrumptious! But unlike many of the other sweet treats I like to post on here, these are actually good for you. Thanks to the perfect snacking power of almonds, these little guys will give you a burst of energy when you're feeling fatigued, and satisfy your craving for something sweet at the same time!
They are: delicious, satisfying, healthy, paleo-friendly, vegan-friendly (sub agave for honey), and only 150 calories per ball!
All you need to make them is:
2 cups shredded coconut (plus some extra)
½ cup almonds
2-3 tbsp honey or agave syrup, to taste
2 tbsp coconut oil
Zest and juice of 1 lemon
It's easy as 1, 2, 3!
1. Blend all ingredients on high in food processor for 1 minute.
2. Roll into small balls, about a teaspoon each, and then roll in extra coconut to coat.
3. Place in the fridge to chill until firm.
Store in the fridge, and pop one whenever your body is craving energy and sweetness!
