This is one of my favorite marinades EVER. Pork is very important to the Cuban cuisine, and one of the tastiest ways to prepare pork is with mojo criollo -- a seasoned marinade with a fusion of fresh citrus fruit, garlic, cumin, and oregano. My gosh, I am drooling!

The mojo is a essential for making the pork so-damn-good. Mojo isn't only for the pork, though. You can poor, drench, and soak whatever meat you want -- from chicken to fish. Oh, you can even use mojo for vegetables and salads!

Making The Mojo

What You'll Need:

3 peeled garlic cloves (minced & crushed)
2 teaspoons salt
1 teaspoon cracked black pepper
2 teaspoons dried oregano
1 cup fresh orange juice
1/2 cup fresh lemon juice
1/2 cup fresh lime juice
1 cup Spanish olive oil

How to Make It:

1) Mix all marinade ingredients in a bowl and let sit for 30 minutes.
