Mahi-Mahi w/ Chipotle Pineapple Sauce
A spicy sweet treat for fish lovers Servings - 4People Prep Time - 5 Minutes Cook Time - 10 Minutes Passive Time - 15Minutes Ingredients 4 5oz Mahi Fillets 1/2tsp Kosher Salt 2tbsp Unsalted Butter 1tbsp olive oil 1tbsp Fresh Chives Finely Chopped 2tbsp Pineapple Preserve (Can Substitute w/ Apricot) 1tbsp Chipotle Pepper Sauce Instructions Preheat large saute pan on medium heat for 2-3 minutes. Season fish with salt. Place butter and oil in pan. Add fish - cook for 4-5 minutes on each side. Cook to 145° or opaque and separates easily. Chop chives as fish cook Remove fish from pan. Whisk preserves, pepper sauce, and chives into pan juice. Cook 1 minute.
