Frijoles borrachos, or drunken beans is a savory bean stew that's slowly cooked. These beans are simmered in dark beer and bacon. Mmm, bacon! Can someone please tell me why beans are so perfect? Actually, I don't need to know the reason. The awesome things in the world are left unexplained. Frijoles borrachos is slowly cooked for that thick consistency, and savory flavor. This is a fusion dish -- involving a Mexican and Texas bite.
What You'll Need:
1 16 oz package of dry pinto beans
1 12oz can or bottle of your favorite dark beer
3 - 4 cups of water
1 - 2 Jalapenos (optional)
2 medium sized tomatoes (diced)
1 medium sized onion (diced)
3 cloves of garlic (minced)
8 oz. of bacon, chopped
1 bunch of cilantro
1 tsp. chili powder
2 tsp. cumin
salt to taste
How To Make It:
1) Rinse the beans under hot water for 5 minutes.
2) Place the beans in a slow cooker. Pour beer on top of the beans. Then add the water, bacon, jalapenos, tomatoes, garlic, onion, cumin, chili powder, and salt.
3) Cook for 12 hours. Serve.
