Bacon-Wrapped Potato Wedges

Fact: literally everything is better wrapped in bacon. EVERYTHING. Puppies. Chocolate. Human beings. Wrap them in bacon and guaranteed I will love them.

If you don't want to wrap your puppy, well then, how about some potatoes? Talk about an easy and delicious fall side dish!! These might even beat out potato skins for my favorite potato/bacon mashup... especially because of all the extra buttery goodness. All you need to make these are:
2 large Idaho potatoes (about 1/2 pound each)
12 slices bacon (3/4 pound)
2 cups canola oil
2 tablespoons unsalted butter, melted
1 tablespoon honey
1 tablespoon chopped scallions, white and some green
1/2 teaspoon chopped fresh parsley
Salt and pepper
1. Cut potatoes into 6 wedges each. Wrap with bacon and secure with a toothpick.
2. Fry in oil in a large sauté pan over medium heat for around 20 minutes, until potatoes are tender. Increase heat to high to crisp bacon, 3-5 minutes.
3. Mix butter, honey, scallions, parsley and 1/4 tsp. pepper (plus salt to taste) in a small bowl.
4. Allow potato wedges to cool on a plate. Drizzle with honey butter mixture right before serving.

Enjoy these delicious potatoes!! They're also AMAZING re-heated in a skilled for breakfast the next day... or chop them up, mix in with some egg, and make a hash! :)
