Whether you're a hobbit, dwarf, elf or man you're gonna love this..
Okay, this recipe is the only way to make delicious Lembas bread. But I'll warn you, it might satisfy you for a whole day but you'll want to eat more than just one bite!
Okay, you'll need:
2 1/2 cups of flour (Bread or All Purpose, it doesn't matter)
1 tbsp of baking powder
1/4 tsp of salt
1/2 cup of butter
1/3 cup of brown sugar
1 tsp of cinnamon
1/2 tsp of honey
2/3 cup of heavy whipping cream
1/2 tsp of vanilla
Once you have all of your ingredients, preheat your oven to 425°F. Mix the flour, baking powder and salt in a large bowl. Add the butter until fine granules form, the best way to do this is with a mixer. Then add the sugar and cinnamon, mix thoroughly. Finally add the cream, honey and vanilla and mix until a nice dough is formed.
Usually the dough is still too sticky to work with so for the next part you can flour down a counter top and your hands and knead the dough until you can easily roll it flat and it won't stick to anything.
Roll the dough until it has about 1/2 inch thickness and cut out 3-inch squares, use a knife to criss cross each square from corner to corner lightly. Don't cut through the dough. Place the biscuits on a greased (buttered?) cookie sheet about an inch apart from each other, or closer if you prefer, they don't get much bigger as they bake. Bake for 12 minutes or more, just use your own judgement. They will be lightly golden when they're finished.
As a final touch I like to brush the tops of them with melted butter as soon as they come out of the oven and sprinkle with powdered sugar.
And viola! You've got yourself some delicious Elven Lembas bread.
