Black bean soup is super easy to make, and it's a perfect soup to have when you want something ready fast. I am definitely a soup girl, and bean-based soups are one of my favorites. Not only is this soup easy to make, but super cheap too. When I was in college and on a budget, I'd eat bean soup often. You can make it hearty with different vegetables and even slow cook it get it to be come a stew. If you want something extra, this goes well with tortilla chips.
What You'll Need:
2 cans of black beans (undrained)
2 garlic cloves (chopped)
1 cup of red onions (chopped)
1 cup of green bell peppers (chopped)
1/2 small can tomato sauce
1 tablespoon of olive oil
Salt & pepper to taste
How To Make It:
1) In a pot, add the red onion, garlic, bell peppers, and olive oil and cook until onion is soft.
2) Add the black beans and tomato sauce -- mix.
3) Cook on low heat for about 45 minutes. Serve.
