Every year, the night before Samhain (Halloween; the terms are interchangeable in my multi-faith household) my family carves pumpkins. We do not discard anything, though. Seeds get roasted and the stringy stuff gets slow-cooked overnight. On Halloween, I use the pumpkin puree in unique new ways (although my kids' favorite is pumpkin chili, which they always insist I make for dinner.) This year, we are going to have pumpkin burritos!
What you need (makes about 12 burritos): 1 and 1/2- cups pumpkin puree (canned or homemade) 1- 31 oz can of refried beans 1 lb ground beef, browned and drained 1 tbsp sugar 1 tsp garlic powder 1/4 tsp cinnamon 1/4 tsp nutmeg 1 to 6 tbsp taco sauce (to taste) salt/pepper (to taste) burrito wraps optional toppings: shredded lettuce diced tomatoes sour cream guacamole picante sauce shredded cheese
Stir together beef, beans, pumpkin, taco sauce, sugar, and seasonings. Cover. Cook over medium-low heat, stirring occasionally. Steam burrito wraps, as desired. Spoon filling onto wrap, sprinkle on your favorite toppings (either in the wrap or smother it), and enjoy!
