1/2 skinless, boneless chicken breast halves ( I buy the boneless tenderloin chicken breasts) Salt pepper to taste 2 tbsp all-purpose flour 1 egg, beaten 1 cup panko bread crumbs 1 cup oil for frying, or as needed 1.) Season the chicken breasts on both sides with salt and pepper. (I personally let it marinate for about 30 mins). Place the flour, egg and panko crumbs into separate shallow dishes. Coat the chicken breasts in flour, shaking off any excess. Dip them into the egg, and then press into panko crumbs until well coated on both sides. 2.) Heat 1/4 inch of oil in a large skillet over medium heat. Place chicken into the hot oil, cook 3 or 4 minutes per side or until golden brown. You may serve it with Worcestershire sauce or with katsu sauce. It may also be served along with Curry, which I always do.
