Don't throw away your left over rice!
The left over kind is the best kind of rice to make fried rice, follow the pictures and make yourself a healthy vegetarian fried rice after you hit the gym : ) What will you need? - 2 cups leftover white rice - 2 eggs, scrambled - 1/2 large yellow onion - 2 green onions (for garnish) - 2 cups chopped vegetables (I used carrots, mushrooms, zucchini) - 1 clove garlic, finely chopped - 1 tsp ground ginger - 1/4 c vegetable oil - 1/4 cup soy sauce - Salt, pepper
