Here is an idea to spice up that leftover turkey and satisfy your palate at the same time. I just used two turkey legs. I put the turkey in a pot of water and simmered it until it fell off the bone. I strained the broth into another pan and picked the meat of any remaining slivers (you know how legs are). After returning meat to the broth also add these chopped vegetables: onion, carrot, celery, and green pepper. Here are the seasonings I used: 2 heaping spoonfuls (less for less spicy heat) of red pepper paste, 1 teas. sesame oil, 1-2 teas. ginger(depending on taste, start with one), 1 teas.garlic, 2 Tablespoons soy sauce, 1 Tablespoon fish sauce (optional), 1Tablespoon rice wine vinegar, 1 Tablespoon brown sugar. Add 1 can tomato paste. Let simmer while you cook some pasta. Put cooked pasta in bowl and ladle soup over pasta, then garnish with chopped green onion.

Yeah, meals from nothing much really, but they can be the most tasty. It's cold this evening, so this hit the spot.
@nicolejb yeah, me too. I like several styles of cooking including korean, chinese, mexican, italian, etc. So I just kind of wung it. lol.
Oh I should add that if your broth is a little weak just add either some chicken boullion, chicken broth or chicken stock. If there isn't enough broth, you can do this as well.
