ribs.... again
these ribs are aged beef, about 38 days.... braised then cooled and pan-fried in butter and olive oil then simmered in a black fig butter reduction....... then I have golden potatoes pureed with butter, cream, garlic, onion, and Pecorino and topped with some really nice parmigiano.....
