If you're looking for a potato chip alternative, yuca is your best bet. Of course you can make them healthy by making them baked. Also, these bad boys are vegan! ;)

What You Need:

Salt & pepper to taste
Ice water

How To Make It:

1) Slice off about 1 inch from each end of the yuca. Peel the skin from the root.
2) Slice with a vegetable slicer. If you don't have a vegetable/mandolin slicer, may use a knife. Slice at about 1/8 inch thick.
3) Put the slices in ice water right away and let them sit for about 45 minutes Remove slices from the water. Drain and dry on paper towels.
4) Add the slices in hot oil (370 degrees Fahrenheit) until they are lightly brown and crisp. Drain the slices on paper towels, sprinkle with salt and pepper.

I saw Yucca in the store and didn't know what you do with it. Any ideas on plaintains? I like them but not fried which is how it's usually served to me.
