Earlier today I went to a hole-in-wall Mexican restaurant and ordered something quick. I ordered a "burrito with rice," not know what they actually meant was "rice burrito." Anyway, it was freakin' good. If you're looking for a vegetarian option, this is the way to go.
What You Need:
8 inch tortillas
2 cups refried beans
1 cup white rice
1 cup shredded cheddar cheese
How To Make It:
1) Microwave refried beans. Prepare 1 cup of white rice (if you're lazy like me, you can use the boil-in-a-bag rice).
2) Mix the refried beans and rice together. Microwave tortillas for 15 seconds.
3) Spread refried beans and rice on each tortilla. Sprinkle cheese. Wrap burrito.
