Here is another healthy, yet delicious recipe to help keep you on track to being healthier in 2016. This recipe will allow you indulge in some sweets, while still being healthy. This recipe comes from the creative people at Averie Cooks.


For this recipe, you will need:
-- 1/2 cup (1 stick) of unsalted butter, melted
-- 1 cup of all-purpose flour
-- 3/4 cup of old-fashioned whole-rolled oats
-- 1/2 cup of granulated sugar
-- 1/4 cup of light brown sugar, packed
-- Pinch of salt
For the blueberry layer, you will need:
-- 12 ounces (2 cups) of blueberries
-- 1/3 cup of granulated sugar
-- 2 tablespoons of lemon juice
-- 2 teaspoons of cornstarch
For cooking the recipe, you will need:
-- 8x8 baking pan
-- Aluminum foil
-- Cooking spray
-- Spatula
-- Microwave-safe bowl
You can find all of these items at a grocery store.

Prepare and make crumble mixture

Before you begin, preheat your oven to 350 degrees Fahrenheit. Then, line your baking pan with aluminum foil and spray with cooking spray. In the bowl, melt the butter. Then, add the flour, oats, sugar and salt and stir until fully combined. Set 1 cup of the mixture aside to be used as crumbles on top of the blueberry bars. Put the rest of the crumble mixture in the baking pan and spread with a spatula until it covers the entire bottom of the pan.

Make blueberry layer and bake

In a bowl, mix all of the blueberry layer ingredients and mix until fully combined. Then, spread the mixture over the top of the crumble layer that is already in the baking pan. Then, add another crumble layer on top to finish out the bars. Place the bars in the oven and bake for 55 minutes, or until the edges are golden-brown. Remove from oven and allow the bars to cool for at least 30 minutes before eating.

Cut the blueberry oatmeal crumble bars into pieces and enjoy!
