Just in time for the Spring study courses, you can look it up. Specifically, it's called, "Taco Literacy: Public Advocacy and Mexican Food in the U.S. South." Course number: WRD-422, taught by Steven Alvarez, PhD.
Though, you wouldn't expect something like this to pop up in the Bible Belt of America, the course is more than sampling authentically-prepared Mexican tacos, its aim is to challenge perception and educate the reality of migration through food. Basically, it's politics via gastronomy.
And since you're wondering, no, there will be no stops at popular chains like Taco Bell, Chipotle or Qdoba. Nadda!
