Vegan Peruvian Chickpea Stew
Sometimes this stew is made with chicken, this time we're making vegan. It's a pretty easy recipe, as most stews are (it's basically just throwing pretty great things together -- right!?)

What You Need:

1/2 large onion, chopped
3 garlic cloves, peeled and minced
2 tablespoons olive oil
2 cups canned chickpeas (KEEP THE LIQUID)
4 tomatoes, chopped in small chunks
1 small yellow squash, peeled and diced
1 teaspoon cilantro
Salt
Pepper

How To Make It:

1) In a pot over medium heat, saute onion and garlic in oil, until a light brown.
2) Add chickpeas (with canned liquid), tomatoes, squash, and seasonings.
3) Reduce to heat to low. Cover and cook for about 45 minutes, stirring often. Add salt and pepper as needed. Add water as needed.
