Chocolate-Hazelnut Pudding (229 calories per serving)

This luscious pudding offers a tasty hit of calcium to help build bones. If you can't find hazelnut-flavored chocolate, substitute 1/4 cup Nutella and use 3 1/2 tbsp cornstarch instead of 2; the result will be milder in taste. Serves 4 Ingredients 2 tablespoons cornstarch 2 cups 2 percent milk 3 oz gianduja (hazelnut-flavored dark chocolate), broken into small pieces 2 tablespoons sugar 1/8 teaspoon salt Preparation Stir cornstarch with 1/2 cup of the milk in a bowl until cornstarch completely dissolves. Heat remaining 1 1/2 cups milk, chocolate, sugar and salt in a small saucepan over medium-low heat, whisking occasionally, until chocolate melts. Raise heat to medium; cook, whisking occasionally, until almost boiling (steam will rise from the surface). Stir cornstarch-milk mixture again until smooth; add to saucepan in a thin stream, constantly whisking. Bring pudding to a simmer, continuing to whisk. Simmer, constantly whisking, 1 1/2 minutes more. Pour pudding into a bowl or four 5-oz cups; press plastic wrap against the surface of pudding to prevent a skin from forming. Refrigerate at least 2 hours. Serve cold.

These look simply incredible. Two of my favorite things, chocolate chip cookies and caramel, combined into one heavenly cookie creation. I was looking for more caramel recipes (because that's what I do in my spare time, duh) when I found this recipe from Table for Two. I mean, can you even imagine anything more perfect?!? Look at that gooey, warm caramel. Those molten chocolate chunks. That perfectly chewy cookie. Imagine how good these are fresh out of the oven. Caramel Stuffed Chocolate Chip Cookies Prep Time: 10 min. Cook Time: 13 min. Difficulty: Easy Recipe adapted from Table for Two Ingredients 3 sticks (1½ cup) unsalted butter, softened 1½ cup dark brown sugar, packed ½ cup granulated sugar 2 eggs 4 tsp. vanilla extract 2 cups all-purpose flour 2 cups bread flour (you may use all-purpose flour instead if you don't have it on hand) 4 tsp. cornstarch 2 tsp. baking soda 1 tsp. salt 1½ cups chocolate chunks ½ cup dark chocolate, finely chopped 18 caramel candies, cut in half to give you 36 Directions 1. Preheat oven to 350°F. Line baking sheets with parchment paper. In a large bowl, whisk together the flours, cornstarch, baking soda, and salt. In another mixing bowl, cream together butter and sugar until fluffy (about 2 mins). Add eggs and vanilla. Beat 2 more mins. 2. Gradually add flour mixture, beating until fully incorporated. Fold in chocolate chips with a spatula. To form the cookies, take a spoonful of dough, and use your thumb to make a small hole and press the caramel into the center. Re-roll the ball to cover the caramel candy. 3. Bake for 11-13 minutes. They may look quite soft at this point, but remember they will continue to cook after you remove them from the oven. Allow them to cool completely on baking sheet, or else they'll break and caramel will ooze everywhere. Enjoy, my fellow cookie monsters!! Everyone who's fighting acne, doubts this at some point in time. 'Does dairy make my acne worse?'. You may stop having dairy for a week, only to realize that it is too much trouble and you can't really tell the difference. Let's figure this out together... Research tells us that inflammatory skin problems such as psoriasis, eczema and acne are more common and more severe in those who consume a diet rich in dairy products. These skin problems are even more common in those who indulge in smoking, consume packaged food and are exposed to polluted air. Cow's milk, which is the largest consumed animal milk in the world, contains casein protein and whey protein. Both these are known to raise the levels of growth hormones in calves as well as humans. Growth hormones such as insulin-like growth factor - 1 or IGF-1 is strongly linked with increased sebum formation in our skin. After infancy our body increasingly loses its ability to digest lactose, a sugar found in milk. We know that more than 50% of the world's population is lactose intolerant. Milk and milk products trigger all sorts of allergies as well as acne. Besides this, cows and buffaloes are regularly injected with artificial hormones to increase their milk supply. When you consume dairy that is mass produced with such practices, it throws your hormones off balance. Dairy may also promote growth of unhealthy gut bacteria and cause gut inflammation. This alters the way your food is digested and absorbed, which in turn leads to vitamin deficiencies and dull skin. How to prevent dairy related skin problems? Reduce dairy intake and switch to high-fiber diet instead. Increase your intake of omega-3 rich food and supplements to achieve a blemish-free skin. Do not substitute dairy with packaged almond milk or soy milk. Consider switching to green tea or freshly brewed black coffee instead. Both of these have plenty of antioxidant benefits which boost your immunity and make your skin glow. If you plan to give a dairy-free lifestyle a try, avoid all dairy products completely for atleast 3 weeks to see the improvement. Any thing less than 2 weeks cannot give you an idea of whether dairy truly aggravates your acne. Chocolate Chip (Perfectly Safe!) Cookie Dough Truffles
About two weeks ago, @vegantraveler posted the most hilarious card in her Vegan Laughs that really got me thinking. It had a picture of a vegan baker licking cake batter off a mixing whisk and bragging about how vegans get to eat all the batter they want! (Check it out over here: http://www.vingle.net/posts/586948-Why-I-love-Vegan-Baking) And it's true! While admittedly, I haven't been vegan or vegetarian in years (gasp), I do still eat vegan and vegetarian foods regularly and appreciate the added safety in plant-based recipes. With no egg, no meat, and no dairy, there's less risk of foodborne illnesses and a much longer shelf life. (It's also perfect in a potluck situation when you know it's going to be left out for a long time!) With that being said, you can share and enjoy these cookie dough truffles (made with vegan cookie dough) without all of the concern that usually comes along with eating raw dough. One of my sister's favorite activities to do each holiday season is make a huge batch of vegan truffles for friends, and this is certainly our most favorite! --------------------------------------------------------------- Chocolate Chip Cookie Dough Truffles 2 1/2 cups all purpose flour 1 teaspoon salt 1 cup (2 sticks) vegan butter or margarine, room temperature 3/4 cup granulated sugar 3/4 cup packed brown sugar 1 teaspoon vanilla extract 1/3 cup soy or almond milk 1 cup mini semi-sweet chocolate chips 14 ounces of meltable chocolate (Ghiradelli and Godiva both make vegan melting chocolate, but other natural food brands do too.) 1. Beat butter and sugars and in large bowl with electric mixer on medium speed until light and fluffy. Add cream and vanilla. Stir in flour and salt and mix on low speed (or by hand) until incorporated. Stir in chocolate chips. 2. Cover and chill dough for 1 hour. 3. When dough is firm enough to handle (it may help to lightly flour your hands), form dough into 1" balls and arrange on a baking sheet lined with waxed paper. Place sheets in freezer and let chill for 30 minutes. 4. Melt chocolate candy coating in a double boiler or in microwave according to package directions. Using forks or a dipping tool, dip cookie balls into candy coating to cover. Tap fork on side of pan to remove any excess coating, and return to waxed paper-lined baking sheets. Chill until set. Store, chilled, in an airtight container for up to 1 week.

Once in a while, I have a serious Thin Mint craving. Okay, scratch that. I have a serious Thin Mint craving every moment of every day. I've bought three boxes of shoddy, knock-off "Mint Thins" in the past two weeks (true story). But there's nothing quite like the original – until now. This recipe faithfully recreates this all-American favorite, down to appearance and texture. Folks rave about them. I haven't tried them yet, but I plan to as soon as possible. If you try your hand at putting those pesky Girl Scouts out of business (jk), let me know how it goes! Copycat Recipe: Thin Mints Cookie Ingredients 1 cup unsalted butter, at room temperature 1 cup cocoa powder 1 cup powdered sugar 1 tsp. vanilla extract 3/4 tsp. salt 1 1/2 cups all-purpose flour Coating Ingredients 16 oz. semi-sweet baking chocolate 1 1/2 tsp. peppermint oil 1.) Pre-heat the oven to 350°F. In a large mixing bowl, cream butter until it has a light, fluffy consistency. Add the powdered sugar; mix until combined. Stir in salt, vanilla, and cocoa powder. At this point, the mixture should resemble a thick frosting. Add flour, and mix until just combined. Do not overmix. 2.) Time to use your hands a little. Form the dough into a ball and knead a few times, then flatten it into a disk about an inch thick, wrap in plastic wrap, and place it in the freezer for 15 minutes. 3.) Once dough has chilled, remove it from the freezer and roll it out to a thickness of about 1/8 inch. For a classic look, cut out cookies with a round cookie cutter or small glass with a diameter of between 1 1/2 in. and 2 in. 4.) Bake cookies on an ungreased cookie sheet for 10 minutes. Cool on wire rack. Meanwhile, prepare the peppermint chocolate coating. Slowly melt chocolate, using short bursts of heat in the microwave, or by using/simulating a double boiler. Stir in peppermint oil. 5.) Using a fork, gently lower cookies one at a time into the coating. Turn to coat entirely, then lift out with fork, allowing extra chocolate to drip off before placing cookie on a parchment or plastic-lined cookie sheet. Refrigerate chocolate-coated cookies for 15-30 minutes to allow them to set. Recipe adapted from The View From Great Island There you have it! Your own homemade Thin Mints. OMG Samoa Brownies – Girl Scout Cookies Gone Wild
Somebody pinch me. Am I dead? I must be dead. Because I am IN HEAVEN. These Samoa Brownies, brought to you by Broma Bakery, are all I've ever needed in a dessert: gooey chocolate brownie, toasted coconut, and sweet caramel. I thought Samoa girl scout cookies were as good as it gets – and then I met these brownies. Samoas Brownies Recipe by Sarah Fennel at Broma Bakery Ingredients For the brownies: ¾ cup cocoa powder 1½ cups sugar 2 eggs 12 tablespoons unsalted butter ½ cup all-purpose flour 2 teaspoons vanilla extract ½ teaspoon salt ½ cup bittersweet chocolate disks 1 teaspoon brewed coffee (optional) For the coconut caramel: 1 cup granulated sugar 6 tablespoons unsalted butter, room temp, cut into tablespoons ½ cup heavy cream, room temp 2½ cups sweetened, shredded coconut For the chocolate drizzle: ¼ cup chopped bittersweet chocolate 1. Brownies: Preheat oven to 350°F. Line an 8"x8" baking dish with parchment paper and set aside. In a microwave-safe mixing bowl, melt the butter. Stir in sugar, eggs, vanilla extract, salt, and optional coffee. Once combined, fold in cocoa powder and flour. Toss in bittersweet chocolate disks. Pour the brownie batter into the baking dish, spreading evenly to the edges. Bake for 35 minutes, or until a knife inserted in the center of the brownies comes out clean. Remove from oven and allow to cool for 15 minutes before topping with caramel sauce. 2. Coconut Caramel Sauce: While the brownies are baking, make your coconut caramel. In a medium saucepan, heat the sugar on medium-high heat for about 5 minutes. Use a spatula to occasionally stir the sugar, getting to the bottom of the pan. At first the sugar will be lumpy, but will soon melt and start turning a brownish color. Don't stir too often, just enough to keep everything evenly cooking. After 5 minutes, the sugar should become fully melted. Once it becomes a dark amber hue, remove from heat immediately and stir in butter. The mixture will violently bubble. You're doing it right. Use your spatula to stir the butter and sugar until they melt together completely. This can take 1-2 minutes. Next, pour in the heavy cream and sea salt. You can use 1 to 1½ teaspoons, depending on how much saltiness you like. Use your spatula to stir until everything is combined. Place back on the stove for about 30 seconds, stirring the whole time. Remove from heat. Stir in coconut flakes. Set aside until brownies are cooled. 3.) Assemble the Brownies: Once the brownies have cooled for 15 minutes, run a knife along the edges so they don't stick to the pan. Spread the coconut caramel on top of the brownies. Again, run a knife along the edges to prevent anything from sticking to the pan. Heat the drizzling chocolate in a microwave-safe bowl in 30 second increments. Stir in between each heating. Spoon melted chocolate into a small ziplock bag, creating a makeshift pastry bag. Cut a small (tiny!) slit at the bottom corner of the bag. Drizzle the melted chocolate over the coconut caramel. [Week 1] Monday & Friday - Rest Day Recipes (Chocolate Peanut Butter Banana Smoothie)
You've got to love a training plan that starts off with a rest day! Since Tuesday will be my first long distance run, I want to make great post-run meals ahead of time since I'll probably be too tired once I get home. I'll be making a Chocolate Peanut Butter Banana Smoothie since it has complex carbs AND protein. Plus its chocolate peanut butter...hello! Here’s the protein breakdown of my new favorite smoothie: 6 oz greek yogurt → 18 grams 3/4 cup skim milk → 6 grams 1 Tablespoon natural peanut butter → 4 grams The yogurt adds a ton of protein to the shake and should be pretty easy on your stomach, which can be sensitive after a run. Here's the recipe, enjoy! Ingredients: 1 large banana, peeled, sliced, and frozen 3 Tablespoons unsweetened cocoa powder 6 oz Chobani 0% Greek Yogurt (or 2%, flavored or unflavored) 3/4 cup skim milk (or your favorite kind of nondairy or dairy milk) 1 Tablespoon honey, maple syrup, or agave 1 Tablespoon peanut butter (any kind you like) Directions: Put all of the ingredients into the blender, in the order listed, and blend on high until thick and smooth. I would start with only 2 Tablespoons of cocoa powder, blend, and then add 1 more for a stronger chocolate taste. You may need to stop and stir/scrape down the sides of the blender a few times. Drizzle glass with 1 teaspoon of chocolate syrup (optional) and enjoy! If you prefer a less sweet smoothie, you may leave out the honey. Add more peanut butter for a stronger peanut butter taste. Add more milk to make the smoothie thinner, if desired. Add 1 cup of your favorite greens for added nutrition.
