INTRO: Being Kinda Vegetarian and Totally Latina

Hear, hear! The cheeseburger queen is here to tell you something about vegetarianism.

(Well, make that a black bean burger, instead.)
I've got news: I have been putting the meat down more often. Why? Well, I have always understood the ethical issues concerning the meat industry, and generally I believe we do over-consume meat products. The ethical concerns I have about meat isn't anything new -- I've know them for over 10 years. It was just easier (and tastier) to ignore them.
Also, as someone who grew up eating meat at every single meal, and as someone who went to parties hosted by Latinos with a whole pig being roasted on a spit, it was always easy to shrug off the ethical concerns, because I just wanted a thick, fatty piece of pork slapped on a plate with my side of rice and beans (and I still do). Let's be real, the Puerto Rican cuisine is loaded with meat (especially pork).

I have yet to tell my entire family about my recent meatless food choices, but I can imagine some of them will think I am crazy. And I can just imagine them saying, "what will you eat?"
Any my response will be: everything I am already eating, but just without meat...
Over the past few months, I have been slowly reducing my meat intake. Instead of having meat at every meal, I had it only once day. Recently, I've only had meat perhaps one or twice a week -- and at smaller portions.
The other day, I decided to give up meat for Lent. Although I am not practicing Christian, and I acknowledge Lent as more of a tradition and ritualistic observance for myself, I am using it as a chance to challenge myself to stay strictly vegetarian for at least 40 days.
I just want everyone to know that as I write this card, there are a lot of things I am currently craving. Like sizzling bacon, rotisserie chicken, and lemon-marinated fish. However, I know that I can do without them.
I think one thing I have on my side is that I am a huge fan of vegetables and vegetarian dishes. Although I have always been a meat eater, I have always been a bigger veggie eater. I love broccoli, kale, carrots, black bean veggie burgers, and I love experimenting in the kitchen, cooking up meatless options that are healthier and heartier.
Ever since I have been reducing my meat intake, I must admit that I feel much better. When I had meat last week, I immediately felt sluggish, heavy, and very uncomfortable. It could totally be that it was laced with fat, that I didn't want to strip off.
What I also find challenging is trying to organize my meals in a way that guarantees I am getting the proper amount of nutrients, fats, complete proteins, and carbohydrates. Since I already suffer from really terrible anemia (even when I was a daily red meat eater), I have to now be more diligent in taking my iron pills.
And I can just picture the last doctor I visited shaking her head at two things:
1- The fact that I have given up meat, knowing how severe my anemia is
2- That I still suck at taking my iron pills
But it will all work out! Haha!

And truth is that I've been preparing vegan and vegetarian dishes for a very long time, and I love them! I just get to be even MORE creative in the kitchen, MORE OFTEN!

Children who grow up with pets become more sensitive and sympathetic adults!
Contact with animals gives children a greater sense of responsibility, enhances empathy and increases their understanding of the cycle of life. But Why? Several studies show how children who live with pets have a more developed emotional intelligence (EI), i.e. the ability of effectively understand, manage, and express one’s feelings and interpreting those of others. This is considered to be a key factor for a better quality of life. Unlike the intelligence quotient (IQ), which experts consider to be unalterable, the emotional intelligence can progress with time, through practice. Animals can help children do this. Here are the benefits our four-legged friends can have on our kids. 1. Empathy Children living with pets early learn to take care and feed another creature, initially by observing their parents, storing up all elements they will use in every future interaction with animals. Several studies demonstrate that children who own pets feel more empathy towards other people and animals. 2. Self-esteem Taking care of animals necessarily entails responsibilities, which give children a sense of personal fulfilment and help them feeling independent and competent. Nienke Endenburg and Ben Baarda, authors of the book The Waltham Book of Human–Animal Interaction, reports an experiment in which children with low self-esteem showed great progresses after they spent 9 months with a pet in their classroom. 3. Cognitive development Spending time with pets can ease the acquisition of language and improve oral competences in children. They don’t only play with animals, but also talk to them and often read stories in their presence. Moreover, “conversing” with animals helps children fighting stutter. 4. Stress reduction Animals offer a unique emotional support, and are able to weaken negative feelings. During a research children were asked to tell who they would talk to if they find themselves in a spot, and most of them mentioned their own pets. Effectively, we often feel unconditionally supported by them, whilst other people would judge and criticise certain situations. What do you think?
Homemade Pop-Tarts? Oh Hells Yeah!
I never want to eat a store bought Pop-Tart again. Not after looking at this recipe, which uses real, flaky butter pastry (instead of crumbly cardboard dough) and your favorite fruit preserves (instead of sugar mixed with red dye 40). The homemade frosting and cheerful rainbow sprinkles are the icing on the cake! For now, here's the recipe for your new favorite breakfast (or anytime) treat. Homemade Pop-Tarts Prep Time: 20 mins. Chill Time: 3 hours. Cook Time: 30 mins. Difficulty: Medium Makes 8 pop-tarts What You'll Need For the pastry: 2 cups + 2 Tbsp all-purpose flour, plus more for rolling 1 tsp salt 1 tsp granulated sugar 1 cup unsalted butter, cold and diced into 1/2-inch cubes 4 - 5 Tbsp ice water 3/4 cup strawberry preserves, divided (or other preserve of choice) For the icing: 1 cup powdered sugar 2 Tbsp half and half, plus more as needed 1/4 tsp vanilla extract What To Do 1. Make the pastry dough: Pulse together flour, salt and granulated sugar in a food processor. Add butter and continue to pulse until the butter is broken up, and the mixture has a mealy texture. Add 4 tablespoons of water and pulse a few times until it comes together into dough; if it fails to come together, add another tablespoon of water and pulse again. 2. On a clean surface, divide dough into two portions. Shape each into a 5-inch dish, cover with plastic wrap, and chill in the fridge for 1 hour. Meanwhile, line two rimmed cookie sheets with parchment paper. 3. Remove one disk from the fridge; leave the other one to chill. Roll out the dough disk into a rectangle measuring approximately 13 inches by 11 inches. If edges crack, just stick them back together and keep rolling. Trim edges just so, so you have a 12"x10" perfect rectangle. Cut this into 8 5"x3" rectangles. 4. Arrange 4 rectangles evenly spaced on the parchment-lined cookie sheet; spread 1 and 1/2 tablespoons of jam evenly down the center of each rectangle. Seal edges with fingertips, then reseal with a fork. Use a tooth pick to poke the top of each tart 4 times. Let chill in the freezer for at least 2 hours, or up to one week. 5. Repeat process with second disk of dough. 6. Preheat oven to 375°F. With one rack in the upper third of the oven and one in the bottom third, bake frozen tarts until golden, rotating racks halfway through baking. It will take about 25-30 minutes in all. Allow to cool on the cookie sheet for several minutes, then transfer to wire rack. 7. Make the icing: Whisk together all ingredients, then add additional half and half a 1/2 teaspoon at a time until you reach the desired consistency. Spread over cooled pop-tarts, then dust with rainbow sprinkles. Allow to set at room temperature. Store in an airtight container. Enjoy! A little bit of a process, but totally worth it, don't you think? I can't wait to try these sweet treats in my own kitchen! :D
