Chocolate Pretzel Cookies

You all think I'm kidding, right?!
Um...No! Think again!
Thanks to Sally's Baking Addiction, which you can see here, this recipe is going to keep me moving forward this 2016!

Ingredients:

2 cups + 2 tablespoons all-purpose flour
1/2 teaspoons baking soda
1/2 teaspoon salt
3/4 cup (1.5 sticks) unsalted butter, softened to room temperature*****
1 cup packed light brown sugar
1/2 cup granulated sugar
1 large egg, at room temperature
1 large egg yolk, at room temperature
2 teaspoons pure vanilla extract
1 cup chocolate covered pretzel pieces

Directions:

Whisk the flour, baking soda, and salt together in a large bowl. Set aside.
In large bowl using a hand-held mixer or stand mixer fitted with a paddle attachment, beat softened butter for about 1 minute on medium speed until creamy. Add the brown sugar and granulated sugar, then beat on medium-high speed until creamy and combined. Scrape down the sides and bottom of the bowl as needed. Beat in egg, egg yolk, and vanilla extract. Scrape down the sides and bottom of the bowl as needed. With the mixer running on low speed, slowly add dry ingredients to wet ingredients. Pour in the pretzel pieces and beat on low speed for 20 seconds or until combined. Once completely combined, cover cookie dough tightly and chill in the refrigerator for 30 minutes and up to 5 days.
Preheat the oven to 325°F (163°C). Line a large baking sheet with parchment paper or a silicone baking mat. Set aside.
Remove cookie dough from the refrigerator. Drop by Tablespoonfuls onto prepared baking sheet. Press a few more chocolate pretzel pieces onto the tops for looks, if desired. Bake for 8-10 minutes or until edges are slightly browned. The centers should appear very soft and puffy. Repeat with remaining cookie dough.
Make ahead tip: Cookies stay fresh covered at room temperature for up to 1 week. You can make the cookie dough and chill it in the refrigerator for up to 5 days. Allow to come to room temperature and continue with step 4. Baked cookies freeze well for up to 3 months. Unbaked cookie dough balls freeze well for up to 3 months. Somebody pinch me. Am I dead? I must be dead. Because I am IN HEAVEN. These Samoa Brownies, brought to you by Broma Bakery, are all I've ever needed in a dessert: gooey chocolate brownie, toasted coconut, and sweet caramel. I thought Samoa girl scout cookies were as good as it gets – and then I met these brownies. Samoas Brownies Recipe by Sarah Fennel at Broma Bakery Ingredients For the brownies: ¾ cup cocoa powder 1½ cups sugar 2 eggs 12 tablespoons unsalted butter ½ cup all-purpose flour 2 teaspoons vanilla extract ½ teaspoon salt ½ cup bittersweet chocolate disks 1 teaspoon brewed coffee (optional) For the coconut caramel: 1 cup granulated sugar 6 tablespoons unsalted butter, room temp, cut into tablespoons ½ cup heavy cream, room temp 2½ cups sweetened, shredded coconut For the chocolate drizzle: ¼ cup chopped bittersweet chocolate 1. Brownies: Preheat oven to 350°F. Line an 8"x8" baking dish with parchment paper and set aside. In a microwave-safe mixing bowl, melt the butter. Stir in sugar, eggs, vanilla extract, salt, and optional coffee. Once combined, fold in cocoa powder and flour. Toss in bittersweet chocolate disks. Pour the brownie batter into the baking dish, spreading evenly to the edges. Bake for 35 minutes, or until a knife inserted in the center of the brownies comes out clean. Remove from oven and allow to cool for 15 minutes before topping with caramel sauce. 2. Coconut Caramel Sauce: While the brownies are baking, make your coconut caramel. In a medium saucepan, heat the sugar on medium-high heat for about 5 minutes. Use a spatula to occasionally stir the sugar, getting to the bottom of the pan. At first the sugar will be lumpy, but will soon melt and start turning a brownish color. Don't stir too often, just enough to keep everything evenly cooking. After 5 minutes, the sugar should become fully melted. Once it becomes a dark amber hue, remove from heat immediately and stir in butter. The mixture will violently bubble. You're doing it right. Use your spatula to stir the butter and sugar until they melt together completely. This can take 1-2 minutes. Next, pour in the heavy cream and sea salt. You can use 1 to 1½ teaspoons, depending on how much saltiness you like. Use your spatula to stir until everything is combined. Place back on the stove for about 30 seconds, stirring the whole time. Remove from heat. Stir in coconut flakes. Set aside until brownies are cooled. 3.) Assemble the Brownies: Once the brownies have cooled for 15 minutes, run a knife along the edges so they don't stick to the pan. Spread the coconut caramel on top of the brownies. Again, run a knife along the edges to prevent anything from sticking to the pan. Heat the drizzling chocolate in a microwave-safe bowl in 30 second increments. Stir in between each heating. Spoon melted chocolate into a small ziplock bag, creating a makeshift pastry bag. Cut a small (tiny!) slit at the bottom corner of the bag. Drizzle the melted chocolate over the coconut caramel. [Week 1] Monday & Friday - Rest Day Recipes (Chocolate Peanut Butter Banana Smoothie)
You've got to love a training plan that starts off with a rest day! Since Tuesday will be my first long distance run, I want to make great post-run meals ahead of time since I'll probably be too tired once I get home. I'll be making a Chocolate Peanut Butter Banana Smoothie since it has complex carbs AND protein. Plus its chocolate peanut butter...hello! Here’s the protein breakdown of my new favorite smoothie: 6 oz greek yogurt → 18 grams 3/4 cup skim milk → 6 grams 1 Tablespoon natural peanut butter → 4 grams The yogurt adds a ton of protein to the shake and should be pretty easy on your stomach, which can be sensitive after a run. Here's the recipe, enjoy! Ingredients: 1 large banana, peeled, sliced, and frozen 3 Tablespoons unsweetened cocoa powder 6 oz Chobani 0% Greek Yogurt (or 2%, flavored or unflavored) 3/4 cup skim milk (or your favorite kind of nondairy or dairy milk) 1 Tablespoon honey, maple syrup, or agave 1 Tablespoon peanut butter (any kind you like) Directions: Put all of the ingredients into the blender, in the order listed, and blend on high until thick and smooth. I would start with only 2 Tablespoons of cocoa powder, blend, and then add 1 more for a stronger chocolate taste. You may need to stop and stir/scrape down the sides of the blender a few times. Drizzle glass with 1 teaspoon of chocolate syrup (optional) and enjoy! If you prefer a less sweet smoothie, you may leave out the honey. Add more peanut butter for a stronger peanut butter taste. Caramel Stuffed Chocolate Chip Cookies
These look simply incredible. Two of my favorite things, chocolate chip cookies and caramel, combined into one heavenly cookie creation. I was looking for more caramel recipes (because that's what I do in my spare time, duh) when I found this recipe from Table for Two. I mean, can you even imagine anything more perfect?!? Look at that gooey, warm caramel. Those molten chocolate chunks. That perfectly chewy cookie. Imagine how good these are fresh out of the oven. Caramel Stuffed Chocolate Chip Cookies Prep Time: 10 min. Cook Time: 13 min. Difficulty: Easy Recipe adapted from Table for Two Ingredients 3 sticks (1½ cup) unsalted butter, softened 1½ cup dark brown sugar, packed ½ cup granulated sugar 2 eggs 4 tsp. vanilla extract 2 cups all-purpose flour 2 cups bread flour (you may use all-purpose flour instead if you don't have it on hand) 4 tsp. cornstarch 2 tsp. baking soda 1 tsp. salt 1½ cups chocolate chunks ½ cup dark chocolate, finely chopped 18 caramel candies, cut in half to give you 36 Directions 1. Preheat oven to 350°F. Line baking sheets with parchment paper. In a large bowl, whisk together the flours, cornstarch, baking soda, and salt. In another mixing bowl, cream together butter and sugar until fluffy (about 2 mins). Add eggs and vanilla. Beat 2 more mins. 2. Gradually add flour mixture, beating until fully incorporated. Fold in chocolate chips with a spatula. To form the cookies, take a spoonful of dough, and use your thumb to make a small hole and press the caramel into the center. Re-roll the ball to cover the caramel candy. 3. Bake for 11-13 minutes. They may look quite soft at this point, but remember they will continue to cook after you remove them from the oven. Beautiful? Check. Easy to make? Check. Healthy? Hey, they're better for you than a box of chocolates. For a sweet homemade Valentines Day dessert, try something new – these surprisingly simple baked apple roses! To make 6 roses, you'll need: A muffin tin 4 apples, cored and sliced in half (leave the skin on) Juice of half a lemon 3 Tbsp fruit preserves (apricot, apple, strawberry – choose your fave!) 2 Tbsp water (plus more, for soaking apples) 1 sheet of store-bought puff pastry Cinnamon, to taste To see how to make them, check out the video below, or just follow these simple written instructions! Instructions adapted from Tip Hero! How to Make Apple Roses These delicious baked apple roses are a perfect way to impress your Valentine. Or woo them any day of the year! 1. Preheat the oven to 375 degrees F. 2. Take halved, cored, unpeeled apples and carefully slice very thin (see how in the video above). Put slices in a microwave safe bowl and cover with water. Add the juice of half a lemon. Microwave for 3 minutes to soften the slices and make them more pliable for rolling up. 3. In another bowl, mix together 2 tablespoons of fruit preserves and 3 tablespoons of water. 4. Roll out puff pastry and slice into rectangular strips about 2 inches (or a little less) wide. Chocolate Chip (Perfectly Safe!) Cookie Dough Truffles
About two weeks ago, @vegantraveler posted the most hilarious card in her Vegan Laughs that really got me thinking. It had a picture of a vegan baker licking cake batter off a mixing whisk and bragging about how vegans get to eat all the batter they want! (Check it out over here: http://www.vingle.net/posts/586948-Why-I-love-Vegan-Baking) And it's true! While admittedly, I haven't been vegan or vegetarian in years (gasp), I do still eat vegan and vegetarian foods regularly and appreciate the added safety in plant-based recipes. With no egg, no meat, and no dairy, there's less risk of foodborne illnesses and a much longer shelf life. (It's also perfect in a potluck situation when you know it's going to be left out for a long time!) With that being said, you can share and enjoy these cookie dough truffles (made with vegan cookie dough) without all of the concern that usually comes along with eating raw dough. One of my sister's favorite activities to do each holiday season is make a huge batch of vegan truffles for friends, and this is certainly our most favorite! --------------------------------------------------------------- Chocolate Chip Cookie Dough Truffles 2 1/2 cups all purpose flour 1 teaspoon salt 1 cup (2 sticks) vegan butter or margarine, room temperature 3/4 cup granulated sugar 3/4 cup packed brown sugar 1 teaspoon vanilla extract 1/3 cup soy or almond milk 1 cup mini semi-sweet chocolate chips 14 ounces of meltable chocolate (Ghiradelli and Godiva both make vegan melting chocolate, but other natural food brands do too.) 1. Beat butter and sugars and in large bowl with electric mixer on medium speed until light and fluffy. Add cream and vanilla. Stir in flour and salt and mix on low speed (or by hand) until incorporated. Stir in chocolate chips. 2. Cover and chill dough for 1 hour. 3. When dough is firm enough to handle (it may help to lightly flour your hands), form dough into 1" balls and arrange on a baking sheet lined with waxed paper. Place sheets in freezer and let chill for 30 minutes. 4. Melt chocolate candy coating in a double boiler or in microwave according to package directions. Using forks or a dipping tool, dip cookie balls into candy coating to cover. Tap fork on side of pan to remove any excess coating, and return to waxed paper-lined baking sheets. Chill until set. Store, chilled, in an airtight container for up to 1 week.
