Ingredients 1 cup black rice (preferably Lotus Foods Forbidden Rice) 3/4 teaspoon kosher salt 1/4 cup chopped dried apricots (preferably California apricots) 1/4 cup chopped toasted almonds Preparation Bring rice, salt, and 1 3/4 cups water to a boil in a medium saucepan. Reduce heat to low, cover, and cook until rice is tender, about 30 minutes. Fluff with a fork and let stand, covered, for 5 minutes. Stir in apricots and almonds.
