This was sort of a trial-and-error recipe for me! It's the first time I make this vegan.
I think after cooking this dish, I'd definitely look for a vegan 'chkn' that doesn't have any breading on it. Since all I had were the breaded 'chkn' patties at home, that's what I used. But I'd definitely switch that out for something that's non-breaded. Sort of the vegan 'chkn' strips. Other than that, the stew had a lot of amazing flavors!

What You'll Need:

2 Carrots ,chopped in chunks
2 Red potatoes, chopped in chunks
1/4 Large white onion, chopped
1/2 Green bell pepper, chopped
1 Tablespoon olive oil
1/2 Can tomato sauce
1/2 Can red beans (drain water)
1/2 Can corn (drain water)
1 Packet Sazon
2 Tablespoon Sofrito
Chili powder
Cooked Boca 'chkn' strips/patties, cut in pieces

How To Make It:

1) In a large pot, pour 1 tablespoon of olive oil. After place the vegetables, seasoning, and tomato sauce into the pot. Stir for one minute.
2) Add 2 cups of water and heat to a boil. Once boiling, turn to low And let simmer for about 30 minutes.
3) After 30 minutes add the 'Chkn.' Cook for another 15 minutes.
