Roasted Vegetables and Gluten-free Spaghetti

Roasted vegetables with a side of flax and quinoa spaghetti, topped with tomatoes, basil, and parmesan. And pesto!

How To Make Roasted Vegetables:

What You'll Need:
2 fingerling Potatoes, chopped
1/2 cup of Broccoli, chopped
1 Carrots, chopped
1 Tablespoon olive oil Salt
Basil (or seasoning of choice)
1) Preheat oven to 350 degrees
2) In a bowl mix all of your vegetables, oil, and seasonings.
3) Spread out the vegetables in a single layer and roast for about 30 minutes, or until carrots and potatoes are soft.
