Many people think that being vegan is not cheap. But in fact there are lots of ingredients that are not expensive at all so you can prepare plenty of cheap vegan recipes. Since the summer has arrived, it is the perfect time for cheap vegan recipes because markets are full of veggies and fruits that offer cheaper deals. Here are some suggestions that you can try out or that can, at least, give you idea to create your own recipes.
1. Bean And Butternut Chili
1 chilli pepper
2 cans of chopped tomatoes ( 1/2kg. fresh tomatoes that you will chop yourself)
1 tablespoon of brown sugar (or white)
1 butternut squash
Heat olive oil in a saucepan and saute a chopped onion, 2 crushed garlic cloves and chopped red chilli. Add chopped tomatoes, brown sugar and butternut squash. Bring to the boil then simmer for 30 minutes until tender. Stir in a can of cannellini beans and serve.
