What is Sancocho, Anyway?

Sancocho is a popular dish in many Latin American countries. The recipe, of course, varies from country-to-country.

It's a meat and vegetable stew and you can find it in the Puerto Rican, Dominican, Colombian, Panamanian, Venezuelan, Honduran, and other Latin American cuisines. Sancocho is known for its very large chunks of vegetables and meat.

How Is It Made?

Well, it depends which country (and region) you ask. For Puerto Rico, this dish is usually cooked with large chunks of beef, along with vegetables like corn on the cob and potatoes. In Colombia, they might use yuca/cassava. It just depends!
Sancocho can contain different meats like beef, pork, chicken, and fish. I can also consist of different vegetables like potatoes, yuca, yams, and corn on the cob.

What Makes Sancocho...Sancocho?

Although the ingredients vary, some things are true across the board:
+It made with large pieces of vegetables and meat
+It's usually made with root vegetables (corn, potatoes, yuca/cassava)
+It's a stew ;)
