Today I took a spin on BakersRoyale.com and discovered this decadent cocktail that I am eager to try. Rich chocolaty floats made of those famous Girl Scout Thin Mint cookies and Bailey's Irish Cream. Match made in heaven--and just in time for St. Patrick's Day, which is in two days!!!!!!!
2 oz. Bailey’s Irish cream
3/4 cup chocolate ice cream
2 1/2 oz. vanilla cream soda
2 Tbsp. crushed Thin Mints
Garnish: 1 Tbsp. crushed Thin Mints
Add Irish cream to the bottom of a glass and sprinkle 1 tablespoon of crushed Thin Mints on top. Add chocolate ice cream to the glass and then sprinkle a second tablespoon of crushed Thin Mints. Pour vanilla cream soda on top and finish with a final layer of crushed Thin Mints.
