Last night I made a pastelón for dinner. I did tweak the recipe a bit, and made it little different from what I am used to. The pastelón was small, and I only made five layers -- but it was still very good!
For this pastelón , I did make it vegetarian using Morning Star Crumbles. I think I've learned my lesson with trying to get plantains ripe. I had to have patience, and I waited about two weeks for them to get ready. I tried all sorts of tricks to get them ripe faster, but they just didn't work. Doesn't matter -- it all ended up working out at the end.
To make a pastelón, you can follow a normal recipe and just switch out the ground beef for Morning Star Crumbles. Here's the RECIPE.
