These pancakes are so delicious and healthy that you will fall in love as soon as you take the first bite, especially if you are a peanut butter fan!
1) 2 cups oats 2) 2 Tbsp peanut butter 3) 3 Tbsp brown sugar (or regular) 4) 1 cup milk 5) 1 egg 6) 2 Tsp Cinnamon 7) 1.5 Tsp baking powder
In a blender, add in your oats and blend on high. It will make a powder, which is oat flour. In a bowl, add this oat flour and add the sugar, Cinnamon and baking powder. Mix well and then add the milk, peanut butter and egg. Mix this very well and form a batter. Let this batter rest for about a minute. Then pour this batter on a pan (non stick or greased) and then cook as per your liking. I like drizzling some chocolate syrup on mine, but that's totally optional
These pancakes are high fibre, and are overall healthy for you. Peanut butter contains healthy oils and fats which don't add on to your waistline, but give you enough energy, especially for those who work out regularly.
SOME TIPS- These pancakes taste great with bananas, so add some pieces! You can even try making waffles with the same batter. If you are vegan, try adding 1 Tsp of baking soda instead of egg and use almond or other vegan milk. Let me know how it turns out for you!
