While I'm normally the kind of person who wants to be up and out of the house early on the weekends, something about breakfast in bed is pure magic.
For Mothers Day or my mom's birthday we'd always wake her up with a tray and would eat in bad as a whole family, and I miss it so much!
My mom's birthday just passed so I was say dreaming about the old days and tried to think of some healthy breakfasts I could just make myself ;D
Here are three simple and healthy breakfasts that are perfect for breakfast in bed!
I am so ridiculously obsessed with smoothie bowls. A breakfast place near my house has served the most amazing açaí bowl ever since I was little and I crave it at all times.
Basically, just make a smoothie as you usually would (a thicker one works best, try adding banana! Then throw it in a bowl and top it will all your favorites like berries, granola, peanut butter, honey, coconut flakes, etc!
Avocado Toast and Fruit Salad
Simply get a hearty slice of bread, toast until crispy. Then mash some avocado and spread is generously! Add a soft boiled or fried egg on top with some salt and pepper :)
Cut up some fresh fruit and voilá!
Scrambled Eggs and Tomato Slices
I could live on scrambled eggs alone, and actually in college I practically did!
Whisk eggs ,chives, salt and pepper, to taste, in a bowl then melt the butter in a small non-stick skillet over medium-low heat. (I only use butter when I want really creamy eggs, I usually don't put anything in!) Pour in the egg mixture and gently stir with a rubber spatula!
Serve with some fresh slices of tomato and some orange juice!
