For lunch I was craving a huge plate of vegetables, so that's exactly what I had. I basically threw a bunch of vegetables together and sauteed them until slightly browned.
What You'll Need:
Mini sweet peppers
How To Make It:
1) Set a pot of water to a boil.
2) Chop your potatoes and carrots in to sizable chunks. Let them boil for about 10 minutes. Drain and set aside.
3) On a pan over medium heat, add cooking spray. Slightly brown each side of the pepper. After they are slightly brown, add the carrots, potatoes, and garlic and saute for about another 5 minutes.
You can also sprinkle the veggies with whatever seasonings you want. I added crushed red pepper, oregano, and salt.
