This Mother's Day, Make Her A Mexican Breakfast!

For my mother, Mexican food is a reminder of summers spent with her abuela in Coahuila. For me, it's a reminder of her.

The savory flavor of mole sauce and the zest of a perfectly seasoned arrachara remind me of mornings where she'd surprise us in the kitchen with a breakfast a little different than our usual scrambled eggs and oatmeal.
Mother's Day is so often a holiday celebrated by cooking Mom a little breakfast-in-bed, so allow me suggest giving the traditional flavors of a traditional Mexican breakfast a try. You might just find that huevos rancheros are a tasty alternative when (like me) you still haven't nailed that perfect pancake flip.

Machaca Con Huevo

A flavorful combination of seasoned beef and scrambled eggs - You've definitely never had breakfast eggs like these before!

Ingredients

8 large eggs
2 cups shredded beef or carne seca
2 Roma tomatoes, chopped
1 large green bell pepper, chopped
2 serrano chile peppers, minced
2 tablespoons of lard or vegetable oil
1 onion, chopped
2 garlic cloves, minced
2 tablespoons milk

Chilaquiles Rojos Con Huevo

Corn tortilla chips simmered in a topping of enchilada sauce, pulled chicken, and eggs - Yes, you CAN eat chips for breakfast!

Ingredients

1 can (19 oz) of red enchilada sauce
1 package (6.6 oz) of corn tortilla chips
8 ounces of shredded cooked chicken
2 tablespoons olive oil
4 eggs
salt and pepper, to taste
2 - 3 twigs of cilantro, washed
2 ounces crumbled Cotija cheese
1 ripe avocado, sliced
Sour cream, to taste (optional)

Tortilla topped with a tomato-chili sauce and fried eggs - Pair this with rice and refried beans for an incredibly satisfying meal!

2 banana peppers
1/2 medium onion
1 clove garlic

3 tablespoons vegetable oil
6 corn tortillas
6 eggs

Because you can say "Happy Mothers' Day!" without chilaquiles, but they exist and they're delicious, so you really shouldn't have to!
