Fresh Corn Polenta with Eggplant Sauce
If you don't know, polenta is cornmeal, cooked with milk/cream and/or water. It can be kind of plain, but if you doctor it up with sweet corn (fresh or frozen works!) and salty, creamy feta, it becomes moreish (I feel so British using that word).
And if you top it with a tomatoey eggplant sauce, it becomes the perfect vegetarian lunch or dinner.
I LOVE polenta! When I was vegetarian, that was definitely a go-to ingredient for days I wanted a really hearty meal.
