I admit. I'm really bad at packing lunch to work even though I wake up 2 hours before I actually head in to work. It's not an easy task and it takes time and dedication to prep, cook, and pack. Over the weekend, I got some ideas on what to make for dinner and prepare a lunch box before eating dinner. My husband and I usually eat out on Sunday, so I will start the lunch packing on Monday evening. I'll be sharing some of the meal ideas below. Feel free to use them for your own lunch!

Paleo Mexican Salad in a Jar

How awesome is this? The trick is packing the watery content at the bottom and the leafy greens last.

Lentil Avocado Taco

Simply store the lentil in a container, bring a ripe avocado, pack the extras sides and tortilla. And you're set!

Curry Chickpea Mango Salad

You can prepare the curry chickpea for dinner and store in a glass container. Then put the leafy greens in a ziploc. For lunch, just toss them together!

The only thing you need to prep for this is boil the eggs the night before ad mix in the seasonings. The next day, all you need to do is to mashed the avocado with the egg and make your sandwich!

@Animaniafreak That's a really good question. The only reason why it's better than a normal salad container is the salad won't get soggy. The mason jar structure holds the salad layer in place and keeps it fresh. So, it's time to eat you just have to pour the salad in a bowl. And because of the layer, leafy greens will be on the bottom and sauce will be on the top. Hope this makes sense!
I used to have a co-worker that would bring a mason jar salad into work every single day. I was so jealous of her meal prep discipline lol.
Great card with some inspiring recipe ideas! But I don't get the mason jar salad concept, you can't eat straight from the jar which means you still need to bring an extra container, so how's it better than just putting in your normal salad container?
@danidee did she have to tip the salad into a bowl? that's more washing time right there! nope, I'm a sloth and I make it my life's goal to avoid any dish washing....
