This morning I didn't want bread or rice but wanted something light and filling. I found a stalk of cauliflower in the fridge, chopped it and place it in the food processor to make soup. Halfway into preparing the garlic and green onions I changed my mind. I the texture reminds me of rice, so I stir fry it and made cauliflower rice. It turned out better than expected! I think I'll be making this dish more often over summer.

This looks so good! I've heard about using cauliflower as rice before, but I've never tried it. I have, however, tried it as pizza crust. You'd be surprised. It's actually pretty good!

What? I didn't know cauliflower pizza crust exist! Was it homemade?

Yeah! It's a little tricky at first because you need to watch it to make sure it doesn't end up all mushy and undercooked, but my sister and I would make it sometimes when we were testing out different lighter ways to cook.
