Quinoa for breakfast? Heck yes! If you're tired of oatmeal or simply want to pump up your protein during breakfast, try this quinoa dish. This delish recipe is loaded with fiber and vitamins and minerals. Talk about a breakfast of champions! Ingredients: ½ cup raw quinoa 1 cup water 1 tbsp homemade almond milk (or unsweetened store bought) ¼ cup fresh blueberries 1 tbsp chopped walnuts 1 tsp cinnamon Directions: Combine quinoa and water in a medium saucepan. Bring to a boil, then cover and reduce heat to a gentle simmer. Cook 10 to 15 minutes until the water is absorbed and the quinoa is tender. Transfer to a bowl and add walnuts, almond milk and cinnamon. Let cool. Add fresh blueberries on top, stir and enjoy!

quinoa is so versatile. I eat it for breakfast, make salads with it, use it in patties, etc. more quinoa recipes please!

@miranpark88 i usually have it as a salad ... chopped up cucumbers, de-seeded tomatoes, green onions, spritz of lime, salt n pepper to taste n chilled :0
