½ cup raw quinoa
1 cup water
1 tbsp homemade almond milk (or unsweetened store bought)
¼ cup fresh blueberries
1 tbsp chopped walnuts
1 tsp cinnamon
Combine quinoa and water in a medium saucepan. Bring to a boil, then cover and reduce heat to a gentle simmer. Cook 10 to 15 minutes until the water is absorbed and the quinoa is tender. Transfer to a bowl and add walnuts, almond milk and cinnamon. Let cool. Add fresh blueberries on top, stir and enjoy!
