Meatless Monday Recipe: Chipotle Black Bean Tortilla Soup
One full week into June means that we're well on our way to Summer! But I'll be honest - the weather has been a little bit strange here in San Diego. With Tropical Storm Blanca coming up from Mexico, the month so far has been unexpectedly cool and overcast - a bit dissuading for those of us who want to reach for our flip-flops and head to the beach! However, the wonky weather of Southern California's late Spring and early Summer always has me looking to make some unconventional soups. For example, I might go for some matzoh ball soup with a side of sauerkraut pirogi or sprinkle some Follow Your Heart cheddar shreds on a hearty potato soup. But perhaps my favorite soup for this weather is a bean-based tortilla soup garnished with a couple corn tortilla chips for an added crunch, so I can enjoy the flavors of summer while beating that untimely chill! Try this recipe with a number of different garnishes. Top it with a dollap of Tofutti Better Than Sour Cream or chop up some fresh slices of avocado. Either way, you'll find yourself falling in love with the slight kick and aroma of this soup - and have plenty of leftovers too! Chipotle Black Bean Tortilla Soup (Adapted From Minimalist Baker) MAKES 6 SERVINGS INGREDIENTS: For The Soup - 2 tablespoons avocado, grape seed, or coconut oil 1/2 white or yellow onion, diced 3 cloves garlic, minced 1/2 red or orange pepper, diced 1 1/2 teaspoons cumin 1 teaspoon chili powder 1 1/2 cups chunky spicy salsa 4 cups vegetable stock 2 tablespoons coconut sugar or maple syrup (optional, to taste) 2 15-ounce cans of black beans cooked in salt, slightly drained 1 15.25-ounce can of whole kernel corn, drained For The Garnish (Optional) - Lime juice Fresh cilantro, chopped Red onion, diced Tortilla chips Ripe avocado, cubed Hot sauce Non-dairy sour cream (or cashew crema) DIRECTIONS: 1) Heat a large pot over medium heat. Once hot, add oil, garlic, onion, pepper, a pinch each salt, and pepper, and stir. Cook for 4 - 5 minutes, stirring frequently, until onions are translucent and the peppers have a bit of color. 2) Add cumin and chili powder and stir to coat. Then add salsa, vegetable stock, and coconut sugar. Stir to combine, then increase heat to medium heat and bring to a low boil. 3) Once it’s boiling, add black beans and corn, and stir. Reduce heat to low and simmer, covered for 30 minutes or more, stirring occasionally. 4) Serve as is or with recommended serving options above. Leftovers will keep covered in the refrigerator for 5 - 6 days, or in the freezer for 1 month.

GREASE: PREP: Here's something which you have to know. Your first instinct might be to flush it with water, remember that oil repels water, so any H20 contact may just permanently put the stain. Try to use an absorbent paper towel and soak up excess grease. CHOOSE YOUR OBJECT RANDOM: DISH SOAP: Apply some uncoloured soap and let it sit down for approximately five minutes. Rinse with tidy water. BABY POWDER: Sprinkle it on the stain and press it firmly and leave for the rest of the day. CHALK: To absorb the oil, rub it on the stain. Brush off before washing. CORNSTARCH: Sprinkle on the stain, allow it to sit 10 minutes before washing, then shake it out. This works particularly well with suede and leather. VINEGAR: Moisten a towel on paper with some unwashed white vinegar and dab immediately before washing in the stain. NOTE: Often on old stains, this method works! ARTIFICIAL SWEETENER: It may be awful for you, but at least the packets are good for something. Just fill any oil or fats with a little powder — a handy trick when you eat on the go. PREP: Mascara and lipstick are oil-based, so here too the no-water rule applies. If you can get a little bit of the excess stain off without deeper grinding, go for it, or simply move to the next step. For everything else, flush out the stain (if you can) with cold water as much as you can. CHOOSE YOUR OBJECT RANDOM: CREAM SHAVING: Apply shaving cream to the spot for a foundation spill or smudge and wash it. SHAMPOO: It does the same work on its foundation as shaving cream and applies it in the same way. HAIRSPRAY: Dry the stained area first, this is for any stain on your clothes caused by lipstick, for 10 minutes let it be there and with a damp cloth dab on it. DISH DETERGENT: Mix the detergent with warm water and sponge, for sprinkle tan or tinted moisturiser spots or residue. SWEAT & YELLOWING: PREP: The bad news: If the yellowing is there, it means the sweat was stained a while ago. The good news: you can save a step! (And a bonus tip: use aluminium free deodorant to completely avoid stains!) CHOOSE YOUR OBJECT RANDOM: VINEGAR: Make 2-part white vinegar, 1-part water solution. Soak and wash the stain for a few hours. BAKING SODA: Make a baking soda paste with warm water and apply it firmly to the area (give it a small scrub!) with a toothbrush. Sit and rinse for about an hour. ASPIRIN: Take three pills in a plastic bag and Make it as a paste with 2 tbsp of warm water. Apply on the stain and let it for an hour. HYDROGEN PEROXIDE: Mix two parts with a single-section dish and let the concoction sit for an hour on their stain. LEMON JUICE: Sprinkle some salt, and squeeze the lemon juice until the stain is soaking. Rub and wash until the stain is gone. This can be used preventively even when you can not see a stain just before you wash sweat-prone shirts (like your gym wear). FOOD & WINE: PREP: Avoid water and dab the excess with a paper towel with foods rich in oil or butter. Flush the stain from the behind with cold water as much as possible for everything else. The Harry Potter World Food Seems As Magical As It Looks
You'll never believe what's on the menu. It may not be full of magic potions and jumping chocolate frogs but its pretty darn close. The Wizarding World of Harry Potter in Universal Studios L.A. has rolled out its menu for the Hogsmeade village including the Three Broomsticks Pub. Ultimately, the food is your typical American grub with British charm. After all, Americans don't need an exact British menu because we already have an American wizarding school for our magical students or what the kids in the states call now-a-days "no maj". To win over any tourist, one must be impressed by food presentation, atmosphere, and service. J.K. Rowling will not let any of these circumstances go to waste as she continues to boast her billion dollar brand. Below is the list of things the menu entails and it looks pretty promising. Obviously there will be alcohol for adults and butter-beer for the kids. In my opinion that sounds like a pretty fun time and I'm sure the food has been tested by many gourmet chefs to make for perfect results. You'll be able to chow down starting April 7th. Breakfast I dare you to figure out which is the American inspired dishes and which are the British inspired dishes. "Traditional" is a key word in their breakfast presentation. You've got plenty of syrup and bacon. However there's also potatoes, eggs, sausage, croissants, and some hardy meats. Obviously you've seen these foods a million times before but its more for the atmosphere of waking up and enjoying the most important meal of the day in Harry Potter's world. Kid's Menu Automatically, the only thing that I want are the chicken fingers in this picture. Obviously the grapes look pretty appetizing and the potatoes wedges are a nice touch. And if you're going for a more Brit lunch, you can get some fish and chips. I'm sure the macaroni and cheese is delicious because if kids are eating this, it better be tolerable because they are not one to hold back their opinion. Lunch Your generic soup and salad lunch combo. Though they are presented very Panera like, they're probably named something goofy. A fish and chips dinner is always a viable fried choice if you're into that type of thing but a chicken pot pie is definitely your better option. I have to admit that the food styling of the chicken salad is absolutely stunning and definitely something that I would gawk at if served to me. Dinner Very hardy, very meaty, and very traditional. There's a lot of incorporation of vegetables and sauces to make it more authentic. The portions do seem rather large and definitely fresh. I'm not sure if I'm too impressed with the dinner since it seems almost too stereotypical American but I guess it does fit the pub atmosphere. I guess we'll just have to wait and see what people think. Dessert Yes, just go for it. Enjoy!
